Fresh, Local, Sustainable Seafood From Dock to Dish

James Williams Tuesday, May 21, 2013

The combination of fisherman and restaurateur has created a new niche in the fresh fish market called Dock to Dish. This community sponsored fishing co-operative is allowing people to get back to eating fish the way it was meant to be – freshly caught that day.

Rudi Bonicelli, a commercial fisherman, and Sean Barrett, a restaurateur, have been friends and fishing partners for years. Based on Barrett’s experience in Spain where fishermen would bring their fresh haul to the back doors of restaurants to sell, he thought, “We can do that here. We can be the salt water brothers to Farm to Table.” That was the beginning of Dock to Dish.

It is a very simply concept really. Consumers simply purchase a membership to the co-operative and receive a weekly share of fresh in-season fish filets. In addition, they learn more about the cycles of fresh seafood and different ways how it can be prepared. The fishermen are on hand during weekly pick-ups to answer questions and there are also yearly get-togethers and member appreciation days to allow members to connect with other members.

All of this creates a community that helps to protect the environment and supports to fishing economy by eating locally and sustainably.

Dock to Dish is accepting new members on a first come, first serve basis for the inaugural season, which runs from Saturday, May 25th through Saturday, June 29th. Subscriptions are for six weeks and are for individuals (serves 2-3 people twice, $36 per week), families (serves 4-6 people twice, $70 per week), and restaurants (approximately 25 pounds of whole fish, TBD). All fish will be locally caught and will be brought to shore within 24 hours of the catch.

New members will be required to purchase a “Beginner Box” for $114 per subscription. This includes an insulated canvas tote bag, eco-friendly freezer blocks, cedar planks for grilling, and a founding member t-shirt. Also, founding members will receive a one-year membership to Concerned Citizens of Montauk and an autographed copy of seafood cookbook, For Cod and Country, by Barton Seaver.
